ive attached a few pics.
i have 2 large Maples growing close to one another. They flow like mad! 1 Of the taps facing east has an off flavor to tbe sap. Hard to explain it but its a "green" bitter flavor. The west side tap is above average sweet tasting. Consistant with each time i collect. (i always taste the sap, on every tree)

Could be into some damaged wood and pulling some flavor from that?

One year I had what looked like syrup coming out of the tap. Perfect amber color. When I pulled the tap you could just see a little brown wood at the back of the hole.

shavings were white when tapped. I have been getting 2 gallons of sap from this tap on each run. im not gonna sweat it, just made me go hmmm.
