Just checking in from Tennessee. I am in middle Tennessee, west of Nashville, so we are not known for a lot of Maple Syrup production but we do have Sugar and Black Maple here. Mine are all Black Maple. Well, the weather has not cooperated this year at all. It never got cold enough, LOL. We finally got a cold snap into the low 20's at night for a couple days, end of January, and it got the sap flowing but it didn't last. Some trees did well others not so much. I managed to get about 80 gallons out of 20 taps then it went into the 40's at night and the sap just stopped. The final yield was low as well. I guess the sugar content was low. I managed about 65/1. Last year I had 45/1. 6.5 Gallons from 300 Gallons of sap. Not sure why that is. However the syrup is excellent. Better flavor than last year. Hopefully February will get a little colder but I am not counting on it. It's a good thing it is just a hobby.

That's still pretty cool that you are able to make some syrup. We are probably a couple of weeks away in Vermont. Although some guys have started already.

Dave the funny thing is I lived in Michigan for 18 years and watched my neighbors boiling sap and never even considered it. But you can keep the cold. I'll make do without it. But it got cold again. 2 nights below freezing and the sap is flowing again. I might get another 100 Gallons or so. I just wish I had a higher sugar content.

We live in western NC and the sap is flowing good right now.
