Put a wet paper on each plate surface that has the waffle surface.

Sam you must have the 5" press made in Minnesota Jim sends those out with synthetic filters that are reusable. All you need to do is rinse in hot water and install. You will as Riley said after washing when wet any plate that has the waffle pattern gets a paper. You can get papers from most maple suppliers. CDL can get them for you. You can also get them from Smoky Lake Maple Products on their web site.
My understanding is because of the popularity of the 5" most suppliers handle them.
When you break down your press for cleaning just remove the filters peal it from the cake and rinse. Dont ball the filter up or scrub it and dont use soap. Once you reinstall you will circulate hot syrup back into your syrup container and that will remove any sugar sand from the filter and your good to go.
You can go to the filtering threads and see how to operate your pump. Filter presses are all the same in design and operation so ask away and have fun.

I would use a stainless insert adapter. Most use A1 rated milk hose.

I'm surprised you didn't get instructions, as I know he had some instructions in the works several months ago.
As far as hoses, screw a 1/2 inch SS nipple (or half of a longer nipple) into the pump, then use a 3/4 ID clear hose over that. It barely goes on, you might have to heat it in a pan of boiling water. The hose is available at farm stores and is food grade, for milk.
For the discharge, I use a very flexible silicone hose available from brewer supply places, but the same milk hose system would also work. My press is equipped with SS cam-lock fittings so I can remove and connect the hoses easily.

Sam because there 2 different dynamics going on with this pump you need a hose that is thick enough to not collapse on the suction side and can handle the pressure on the discharge side. Now a hand pump wont run wild pumping syrup all over the floor because your in control.
If you as excited as I was when I got my pump and you nlust want to see liquid fly thru it I used the clear fiber reinforced tubing from Home Depot. It worked for years and I abused the heck out of it. But I highly recommend as Larry said get the good double wall hose and clamp it non good and it will out last any other. It is kink resistant and gives a guy a reason to sit in wonderment when your first batch of syrup travels thru it into your containers. :)
