We had a great second run on our new evaporator on Saturday. The first firing was just enough to sweeten the pans, and we had to wait a week to get enough sap to go again. The new 2x6 drop flue evaporated 30 gph steady all day, producing 7 gallons of very light syrup. It's a hugh change from my steam table pans, and very fun. The home made float worked perfectly all day, though we kept an eye on the level and ran it about 1.5 inches just to be safe. The only thing I miss is the dark strong flavored syrup I used to make. Maybe if we can only get a freeze, a later run will give me some darker syrup.
This was our first experience in trying to draw off finished syrup rather than finishing batches on the stove. We need to streamline that operation a bit.
