What size should my coupola be for a 2x8 evaporator?

4'x12'.
That way when you get your next evaporator, you won't have to redo the whole thing. ;)
But, if you don't want to go that way, make it a bit bigger than 2'x8'. I say a bit bigger because you don't want any framing above the pans because steam will condense there and drip back into your sap, which is not what you want.

Traditionally at least the same size as your pans, but like everything else in planning a sap house double it. Then you'll get a hold and won't need it anyway. That's what happened to me. Good luck. P.s. I have some side roof jacks for an 8 pitch roof

If you have hoods and a steam stack or a steam away you will not need to be very big.......my cupola is 4x6 for a 30x10 vortex with only a hood/ stack over the steamaway, the front pan is completely open.........
