We've been making certified organic syrup for 10 years and have been using certified organic canola oil as a defoamer. This year we will experiment with other oils because we don't really like the flavor of the canola. Not that canola has a strong flavor but it does add a flavor to the syrup particularly if we use too much or the oil is not fresh. (slightly rancid) We plan on trying organic sunflower oil and grape seed oil. I have heard about using beeswax.

We used butter and/or cream from our Jersey cows for many years before we became certified orgainc. We thought that made great tasting syrup but now with the possibility of customers with allergies to milk products using cream or butter in not recommended.

We are interested in hearing from those of you that have tried different organic defoamers and your thoughts on the effectiveness and the flavors.

I use safflower oils. It doesn't have hardly any flavor to it so it is hard to detect in the syrup.

Maybe I'm wrong but isn't canola the only one you can use and still be considered organic?

As far as I know the oil just has to be certified organic. Not required to use any particular kind.
