Wondering who is making beverage products with maple sap?
I have experimented with several processes of preserving maple sap over the past 7 years.
Having good luck with pasteurization systems, and ph balancing. not a lot of consistent luck with keeping sap fresh over the long haul, and have had mixed results when the sap starts cloudy.

I looked into it last year and for a couple hundred thousand $$$ you can get an inline pasteurizer. Also noticed that most sap water is bottled in tetra packs. So there's more $$$. My guess is that once pasteurized it dosnt touch air at all and goes right to a bottler. Has a 6 month shelf life if I can remember correctly.

I saw my first bottle of maple sap for sale on a store shelf this past fall. I should have written down the particulars, but I remember thinking it was expensive. It's possible it was in Alaska, so that alone would have been a good reason for it to be pricey! Sap is heavy stuff to ship.
