When you pull off syrup and transfer it to the filtering "system" what are you catching the syrup in? Should it be stainless? Will aluminum work?

Hot syrup could pick up a off flavor from aluminum.

We draw off right into a cone filter. SS pail beneath the filter.
When the pail gets near full, we transfer to a 5 gallon tote.
Made the filter stand out of a stick of ½” copper tubing and a handful of elbows and tees.
Found the pails at our local sugaring supply house. ~2.5 gallons and about $15 a piece.

I try to keep all the equipment stainless if possible. We use a converted dairy milk dumping station for the draw off container. Then it has a port on the bottom to remove the hot syrup, actually goes right to the filter press from there. This allows the container to remain under the draw off all the time and be ready for syrup coming off.

We draw off into a SS pail and put into our SS finishing pan to ensure it is at the correct density, then it goes through the filter press.

We do the same as Sugarmaker. Our SS pot is about 6.5 gal and has a SS nipple out the bottom and it rests in a stand. We then have a syrup high temp tube in 3/4" which clamps to the nipple, then it has a 3/4x1" SS insert coupling. Then the 1" goes to the filter press in port. We also have a ball valve in that line, because there is a tee, we can draw from that tank or from our draw off tank, to the filter pump and move the syrup to our finisher too.

I have 3 stainless pots and 2 stainless pails. I take my syrup off a bit thick, and filter and finish later over propane. I usually set a pail under the spout and collect the draws until it's about 3/4 full, then pour it into the stainless pot for finishing on the propane burner. By the time I have a pail full, there has been some settling take place and the thickest sludge stays in the bottom of the pail.
