Hello, I have an opportunity to have a galvanized metal divider added to my 16 inch by 36 inch stainless steel pan which is my primary cooking device for my small operation.
Should I be concerned with having a small divider that is galvanized in my pan?
Thank you for your answers.

I wouldn't do it. You can get a piece of stainless pretty cheap for that from a junk yard and have someone tig weld it in.

Sounds good. Thank you. I will buy some stainless.

Yes stay with stainless. To be of any value it would need to be fully sealed at the bottom of the divider. Making this smaller pan into two compartments may not help you much?

I ordered a piece of stainless and they are going to cut it into two pieces. We are going to divide the pan in thirds and see what happens. I just don't want to add sap and have it kill the boil in the whole pan. My better system had a 2x3 footer divided into thirds and a pre-heater so I never had the problem until I downsized last year.
Probably downsized too far, but needed the money at the time and sold the bigger unit.
