I bought some maple sugar from a local sugar bush, mixed it with C&H Cane Sugar and made cotton candy for a fund raising event. I didn't think it tasted as good as some I've had at other events. Is there a difference in maple sugar? I assume there is. What should I be looking for in maple sugar if I plan to make cotton candy?

Use sugar made from darker grades. There is a limit to the amount of maple sugar you can use so darker sugar gives more maple flavor.

Thanks, I'll have to shop around. Don't plan to make my own sugar, there are lots of people better at it than I am.
Not familiar with C&H. Is that table sugar?

C&H is pure cane sugar.

You want to use a good flavor ,coarse, sugar made from a darker syrup. Not sure if it's 70/30 or 75/25 cane to maple. Too fine will blow out the spinning head. You can also buy a little coarser cane sugar.

did a fall festival today. Sold maybe 200 cotton candies.We mix 5 to 1. We grind our maple sugar extra fine. Maple sugar melts at a higher temp than wite sugar

I've been leaving mine coarse. What do you notice as different about the cotton candy with the extra fine sugar?

you can use less maple and the large maple chunks dont go pinging around the pan, unmelted

Ok, thanks. Maybe mine is finer than I thought. I get a ring of unused sugar on the outside of the pan, but not anything flying around.
