View Full Version : Chocolate IBC tank

I've looked into the cleaning of barrels and what type of barrels to use (plenty of info, thanks!) but can't seem to find anything specifically on chocolate barrels.
I figured these might be a decent type of container to use but wanted to see if anyone has successfully used barrels with chocolate or vanilla in them. Or if anyone would know if that would cause off flavors in my sap once cleaned properly.

I've had success with 1 tote I've bought out of probley 10. It had vinegar in it so it was easy to clean. I got a couple that had caramel concentrate in them and it's impossible to get them clean. I've tried everything from pressure washing to a pressure wash/sand blast mix. Nothing will get the slight odour of caramel out. White used barrels are the same thing. Some people have had luck but I don't trust them now after spending so much time washing them to no prevail. It's like that one piece of Tupperware that you have that you heated up spaghetti in. Turns the bowl a slight shade of red and it will never come Out. Think it applies to these totes and barrels also.

Not so promising... I'm surprised the best luck you had was with vinegar. I figured that would have produced off flavors. I was hoping that the chocolate would clean out enough to not cause off flavors.

It was white vinegar. I neutralized it first let it soak for a week then rinsed it probley 20 times then power washed it with hot water. I always thought it would be easy to clean them but not the case.A lot of people have had good luck with them but I don't like the unknown of what's left in there. Just my opinion.
I bought some poly tanks at TSC this year. Very good prices and I know nothing has been in them. When I can afford stainless tanks I will be going that route.
