Hey there, I'm wondering if any commercial producers or dealers are willing to share some of their key metrics. I'm in the process of planning a 45k+ tap production operation in Wisconsin from the ground up and could use some advice on what range to expect for initial investment and production costs. Thanks for any guidance you can give.
I'm interested hearing about:
initial investment per tap (including sugarhouse, etc.)
cost of production per gallon (including depreciation)
Some assumptions about the farm:
The evaporator will be wood fired, unless there is a good reason to go with another source of heat (that D&G electric evaporator is sleek).
Tap density approximately 50/acre. The land is already owned.
Aiming for 29" vacuum (pipe dreams?)
There is access to a non-weigh restricted road on the north side.
If you install vacuum systems, deal capital equipment, or specialize in planning large sugaring operations I am open to proposals for all vendors.

the tan and brown areas within the red boundary are predominantly maple.
