View Full Version : Advice for pan setup

Wondering if I could get some advice. For the past few years I've been boiling on and old oil tank evaporator with three roaster pans set on top. It's worked ok but I find I am constantly having to move sap from pan to pan as the pans are very small. Maybe 16 X 20 x 4 at the most.

Anyways i picked up a used pan for $10 which is a lot bigger. 30x38x8 and am wondering how best to set it up. First up it is about 6 inches wider than my evaporator so each side will hang over 3 inches - does anyone foresee any issues with this?

Secondly, length wide if I push this all the way to the back it will only leave 6 inches or so of surface at the front of the evaporator. Not enough room for a finishing pan. I have a couple of options. I guess I could shorten up the arch and try to make more room at the front to fit one of those smaller roasters at the front to finish on or I could simply just pull the new pan all the way to the front and just use one big pan. The new pan has a valve and spigot on it to drain I just am not sure how I would go about draining syrup out of this pan without burning the actual pan itself

The roasters were easy at the end because I could simply just left them out ;)

I think you'd lose some boil with the overhang. Not just the obvious that it's not over the flame, but it will be exposed to cold air. Could possibly insulate the overhanging portion. I would just close off the leftover arch in the back and boil on one pan. As far as not burning the syrup, just shut down the fire when you have about a five gallon bucket of sap left over. The residual heat will boil off some but not enough to scorch the pan.
