For you guys that boil on the steam table pans and attach handles. What are you guys using for handles, and where are you getting them? Or any other tips. I can find the narrower stainless ones for cabinets and etc. but thinking I need more room for gloved hands. I plan on using the oil tank style evaporator next year (unless I come across a deal I cant pass up).
Thanks in advance.

Use the narrow stainless ones for cabinets and just use a light leather glove, it's not too hot to burn you, at least I have never been burned. Otherwise, use those same handles with a standoff(spacer) to raise them up higher from the pan and then you can use a thicker glove if you need to. Depending on how long the standoffs are, you may need longer screws.

Thanks, I wasn't positive how hot it was going to be. I'll keep the spacer idea in mind too,, somehow I never thought of that.
Any other ideas or tips from anyone would be great. I'm 'green as grass' but I know I'm not going to do it all on the turkey fryer and pot again..

Depending on how wide your lip is you can do what I did with my pan. 3/8 stainless rod drilled and tapped 1/4-20 then bent to a handle shape (I have a lathe to drill on center so that's why I drilled and tapped before hand. The hole can be put in after the bend if you don't have a lathe). Then all you need is 2 holes per handle in the pan. I can take my pan on and off with bare hands like this. Alternately if you have access to a tig welder, just weld rather then drill and taped.
