Suggestons requested for LEME topics

The committee for the Lake Erie Maple Expo is hard at work planning this years event. We would like to hear any suggestions about topics for the classes. What are some "hot topics" that would interest many sugar makers? All comments welcome.

I'm hoping that on of the bigger conferences has an hour long topic on rules and regulations that pertain to producing and selling syrup. The first 10 mins or so could deal with federal stuff, and then spend 10 mins for each of for 2 or 3 of the closer states. It seems like this is an area of confusion, it is for me. Stuff like packaging requirements, labeling, do I need a batch code or not, production facility requirements, any legal classifications based on size (ex, if small you don't have to register).
