Other than putting the cream in containers, what else needs to be done. How long is the shelf life of cream?

Refrigerate or freeze it. It's a "non"-sealed product, so shelf life isn't long. There is a formula for shelf-stable cream, but I've never looked in to it.

I usually make about three gallons at a time or roughly around 40/50 containers. I freeze it and usually sell out with in 6 months or less. It keeps easily for a year in a freezer with no ill effects.
