There is a Hobart 20qt stand mixer on craigslist in my area for $600. Is this s good alternative to making granulated sugar and cream. I notice that is what some small scale producers are doing.

Whenever I'm bored, I scan CL for Hobarts. I've been doing it for about a year. I probably won't get one unless it's a great deal - especially since I saw how easy it is to make small batches. You have what I would call a fantastic deal! Assuming it works, has the bowl and at least the paddle fitting, jump on it.

If your not able to snag the Hobart, KitchenAid has a commercial grade mixer that works fantastic. Really built nice and the paddle is all steel. 8 quart bowl SS, 1-3/10 HP motor. We just got one, made sugar the other night and it was finished in 5 minutes. Not a single blister!!
