Hi All,
Has anyone ever attempted to make maple cream, sugar or candy out of slightly ropey syrup.

I have always hauled mine to Bascom's but would like to know if it could be used for something like sugar as well.

If you were able to filter it, then it may be ok for sugar. But it will likely foam like crazy when you boil it so watch out. It may also burn easily at higher temps. I would personally not attempt to make cream or candy with it as those confections require high quality syrup to yield a good quality, stable product.

It did filter, I'll try making some sugar and let you know how it comes out. It doesn't taste bad, just not a strong maple flavor like the rest of the syrup made this season.

Success with sugar making from slightly ropey syrup. Also made me realize it's time to get a Hobart mixer.
It has a nice sweet flavor, stronger than when it was syrup. Perhaps the extra cooking. Brought the syrup to about 265ish. Hard to tell I had three different thermometer's and they all read differently.
I have found temperature is not as important for sugar as for cream and candy.

I was wondering if slightly buddy syrup would work for granulated, also. We think it was successful. Used it in some cotton and seemed good.

I've heard that you can't use it for cotton candy because the buddy flavor really stands out. I'm not sure how granulated sugar would taste but you could make a small batch and let us know.

What I used wasn't terribly buddy. Still had nice dark flavor, with a little bitterness at the end. It made good cotton.
