Given the lousy weather we had in S.E. MI this season I decided it's time to boil inside next season. I have a garage behind the house that already has a chimney pipe for a wood stove, but I'm wondering about the best way to vent the steam. I'm considering a stack through the roof, but not sure about diameter. I'd like to be boiling off 10-15 gallons per hour. Has anybody been there and done it?

Sure, stick it right through the roof, I don’t see any reason not to.
I have 8” stacks on both of my pans.
I’m guessing my flue pan is doing 30~35 GPH and an 8” is about the right size for it.
Math says the syrup pan should be 4~5 GPH, 8” is way overkill for it.
I would think at 10~15 GPH a 6” stack should be plenty, but your call.
No worries if you went to 8”.
