I have been packing most of my syrup in mason jars, (I know it is sealed if the button sucks down).
But I have had 2 customers say they want plastic jugs because the sunlight will cause the color (grade) to change (darken).
Is this a real concern?

Who stores their syrup in direct sunlight? If it's kept in the fridge or before its opened kept in a cupboard it's not going to darken. I pack all my syrup in glass and some in mason jars for myself and have never noticed a grade or colour change in it. Then again I don't store it on the kitchen table by the window or directly on the window sill. The customer is always right though. If they want to purchase your syrup pack it in plastic for them.

I bottle in glass for 95% of our syrup. We do some in plastic for customers that are going to be shipping it. Bricklayer said it, "the customer is always right."

Sometimes it is our job to "educate" the customer to proper storage of a product. As in cool dark maybe even refrigerate or freeze

I know syrup does not freeze solid, but, Is it OK to freeze glass Mason jars?
Will it expand a little?
Will it still maintain seal and not leak?

It will be fine. I have froze in glass before.

We pack in both glass and plastic to meet customer demands.

We sell gallons only in glass.
We tell our customers who want the price break of a gallon but won’t go through it that fast to place the bottle in the freezer.
Pull it out and let it stand/thaw for an hour or so, pour off what they will use, put the cap back on the gallon jug and stick it right back in the freezer.
That helps preserve grade and flavor.

Sold many a gallon that way, never a complaint and plenty of repeat business.

DJ, I keep all of my extra syrup in mason jars in the freezer. It's an excellent way to store it, but I leave lots of headroom in the jar because I'm paranoid of the glass shattering due to expansion of the syrup. I have no idea if you can crack a jar because of overfilling (I wish I knew for sure), but I figured that if I leave an inch or two of expansion space I'll never have to find out. I also put the jars into a ziplock bag, mostly to minimize 'glass on glass' bumping when rummaging around to get other frozen items.

Proper density syrup will not freeze in a typical home freezer set to 0 F, -18C. Liquid syrup at -18C takes up less space than it does at room temperature and canning temp.
