What do you all think of this idea. I want to make some stainless steel tanks for in the woods and in the shack I will be building this summer. My idea is to fasten the steel sheets together with rivets/bolts and then use a food grade silicone (DAP Commercial Kitchen Stainless Steel 100% Silicone NSF Approved) to seal up all the seams, I would like to try and stay away from welding the seams just because of the time and well, stainless is not the funnest to weld in my opinion. If I bolt the tanks together I could easily pull the sheets apart to get everything cleaned and then re-seal all the seams for the following season. What do you all think of the idea? I will be looking to make 2-4 1,000 gallon tanks, 2 for in the woods and 2 for in the shack.

What brand of drill bits do you plan on using? I want to buy some of their stock.
Seriously, that's a lot of drilling. And I think you'll still be dealing with more small leaks than you ever imagined.
Your right, welding stainless isn't the easiest thing to do, but welding would be forever. Nothing to redo each year for the next season.

hire a TIG-matist to weld it

I believe you would find if you checked that the silicone is for "incidental" food contact only (so like a splash zone where sap might hit it and fall back into a tank). Unlikely to be good for prolonged food contact, and thus not suitable for a sap tank.
