Zero 700 Gallon SS tank for sap storage?

There is a Zero brand SS bulk tank for sale nearby on an on line auction. I'm thinking it might make a good storage tank or head tank for sap. It is an older tank, 700 gallons, and was used to store virgin olive oil.

Can I clean it well enough? - I'm thinking because it's stainless I could but I'm not sure. Anything to look for on a used tank? The current bid is $180.

Olive oil should clean out pretty easily. As long as tank is clean on inside of any rust or cracks and holes I would jump on it for $180 dollars. Around here $1 to $1.50 a gallon is going rate for storage tanks
