Hello
I just purchased a used evaporator and set of pans.My question is what do you levle?

The arch?
The pans?

i levled the arch checked the pans with a level on top of the front pan and it is off 3/4" from right to left side,front to back is good. due i shim the pan now to levle that or just get the pans levleusing the arch legs?

Could the top of the pans be off levle that i should be using a shorter levle and checking from inside the pan? any help would be apreciated.

You should do your best to level the arch. The more level your arch is, the less shimming or leveling of the pan you have to do. It is easier to level the arch anyway.

As for how to level the pans. I use a 4' or 6' level on the top of the pans to level them. The longer the level, the more accurate you will be. If it is a commercially produced evaporator, using the top of the pans should work fine. I also check the level of the pans every time I boil since 1/8" of an inch is enough to affect the movement of syrup through the pan.
