Is anyone else drawing off finished syrup on their Mason 2x4 XL? I have been but I think I'm going to start drawing off close to syrup and then finish on propane. The Mason makes great finished syrup But I noticed on my last long run with the pan already sweetened with several syrup draw offs that my GPH evaporation rate dropped to around 6-8 GPH.
When I drew off a lot of syrup the GPH started to increase again, then slow down again once I was close to another draw off. Is this a common problem with type of evaporator and continuous flow flat pan?

This sounds normal to me. the evaporation rate is going to slow down some because the sap is thicker and not as much water in it.

Interesting, I used to draw off finished syrup when I had a mason. Didn't really pay attention to gph rate though, sounds like I should have. I think I still would have rather drew off finished syrup then mess w it again.

I never really thought about evaporation rate with close to finished syrup in draw off channel. I pretty much always draw off finished syrup. Sometimes a little above density, sometimes below. You can always add some distilled water or cook for a few minutes in a stock pot while reheating to can it.
