I am a little late to this party, I am using a flat pan and was wondering if it is better to run the boil with the sap deeper or shallow? Say 4 inches vs. 2. with I boil more with it shallower or does it not matter.

I would say start with 2 inches until you're comfortable with trying something lower...you will boil off sap much faster at shallower levels. No, don't worry about the burnt splashline sap..that comes off and doesn't affect your product. It also adds that cotton candy smell to your boiling area.

Thanks, I will give it a try. With the weather we have been getting I have been overrun with sap and ran out of storage, so I have been kicking around ideas to increase production.

I know lower sap level increases evap rate, but I wonder by how much?
4" vs 2" ?
My guess is maybe 2 gph difference on a 2x4 pan.
Does anyone know a formula or have a better guess than me?
