How long can I store sap that has been through the R.O. and at 21-22brix?

It depends on how cold you can keep it. The colder the better. With higher sugar and warm temps, bacteria will grow quick. Lately with the warm temps, about 15 minutes.

It got down to 19 degrees and it was 12 hrs befor we cooked. No we are having problems running it through the press. Is it because we let it sit to long?

How about heating the syrup a little, then run it through flat filter then through your press? That should get the big stuff out first.

Guys,
I just posted a thread in the Sap Collecting section of the forum about storing R.O.ed sap.
It can be done but it needs to be kept cold. More info in the other post.
