View Full Version : New pan build questions; copper vs SS, thickness?

I am considering building two 2'x2' flat pans.
I have the resources to build them with either silver soldered copper or tig welded stainless steel.
Is there any health concerns with using copper and silver solder pans?
Is sagging a problem?
What thickness material is recommended (for either copper or SS)?

Go with the stainless, it's easier to clean. The copper can't be cleaned with anything strong like vinegar or pan cleaner.

It is a decision that will be harder to make. Copper is a bit harder to clean but has way better heat transfer than SS.
SS is a bit more durable and can clean easier.
