View Full Version : gloppy "almost done" syrup stored too long ?

Hi, I had to put aside a half baked batch of syrup for 3 weeks in 5Gal plastic pals in a cool garage, to be finished later on propane. Just getting back to it, it seems to have gone "gloppy", I tried running it cold thru paper filters but clogs up immediately, it has a bizarre aproning effect, cold, but that's the glop, but still tastes great, is there any hope? or toss it.? It's just for our kitchen.

Take a cup and bring it to a boil. Maybe OK, maybe not.
Had something similar happen a few years back.
It was near the end of the season, let some stuff sit in the pans for a couple of days.
We were waiting for one final run.
Checked what was still in the pans after that little run, it had a rather snotty texture, thought uh-oh.
Lit the fire hoping for the best.
I’ve never seen so much foam, foamed all the way up and out of the pans and no amount of defoamer was going to stop it. Smelled awful, too. Shut down, cleaned up, called it a season.

It's ropey syrup. Usually happens at the end of the season. I guess in your case being only half syrup, it spoiled and is basically doing the same thing as late season sap.
