2x6 evaporator with a scorched bottom

Well I finally did it this year and scorched the bottom of my 2x3 finish pan. Time to drain and clean and we had quiet a discussion about how to complete this and discussed to the point were we both walked away and will deal with it in the morning. So the problem, drain the entire evaporator and clean the entire thing or just plug off the drop flue back portion and clean the front. Thanks for any input.

If your burnt syrup has back flowed, you will want to drain the back pan as well so you don't contaminate the syrup for the rest of the season with a burnt after taste . You cannot dilute it out.
