View Full Version : What do I do with the sap in the pans when I shut down?

I don have enough sap to start back up for another 3 to 4 days . Do I draw off all the sap and refrigerate it until I burn again?
I have a 2x6 patriot evaporator.

Just leave it in the evaporator it will be fine. The sap that's in the evaporator is hot enough when you shut down to kill any bacteria and will be okay for a week or more depending on the outside temperature.

Russell, what about the past weeks temps? I've not boiled since Sunday waiting for the trees to open again and I'm a little concerned about what's in the pan. I'm hoping to have some more sap by this sunday.

It was pretty hot a couple of days last week so it may or may not be okay. Checked to see if has turned jelly like in the flue pan. If it has it will make ropey syrup and you don't want that. If it is still nice and liquid taste it to see if it is sour. If it's not ropey or sour you should be able to add fresh sap and make good syrup.

I drew off all of my semi sweet and stored it in buckets covered in snow.
