Tapped in last week if January and I'm just about to pull the taps this week ,weather here is going to be super warm so think it's over .I'm just kind of puzzled why my last batch came out super light amber color and last three before batches were dark ,isn't it usually other way around?

Late season sap will do that. The metabolism of the sap changes as the trees come out of dormancy and sometimes that will cause the syrup to lighten up. I usually see it at the end of the season when it runs into April.

I think it matches your user name. :) Let the niter settle down in the bottle and then you'll really get a good idea of the finished colour. I'm sure you are having fun!

Haha I'm definitely having fun, only been doing this for about 3 years so didn't know if this was normal my last batches were all a lot darker. Doesn't have the vannila taste like the grade a seems much sweeter.
