View Full Version : syrup taste and smells a little like brown sugar

We batch boil gather all week and boil 150 to 200 gallons on Saturday. Our last batch had a different smell and taste, we didn't do anything different then before. Sap is stored in fridge at 35 degrees in sealed jugs. Any ideas out there thanks

Are you sure you didn't boil that batch a little past syrup? I did that once and it had a slight brown sugar taste and smell. I thinned it a little before bottling but it retained that taste. Pretty good on pancakes nonetheless and some I made candy with..kids loved it.

I left my pans full of concentrate for a few hours over shouldering coals. Checked and two pans were nearly perfect but the other was getting gooey brown foam. It absolutely has more of a molasses like flavor than the other pans.
I'm thinning it, filtering it and keeping it separate as an extra bold variety. It shows you that the boiling and over cooked can affect the flavor
