what happens if your bottle syrup that wasn't quite finished ,for example i hit 221 degrees on my boil and had a hot reading of 55 brix on my hydrometer ,any comments or suggestions would be greatly appreciated ,thanks

It needs to be brought to density for safe bottling and long keeping. Low density syrup is prone to spoilage as there isn't enough sugar content to retard microbial growth. If you don't want to reprocess and rebottle then keep it refrigerated and use it ASAP or freeze it.
How much are we talking about
