I see on here a lot of folks draw off and put the unfiltered syrup in kegs and then filter and bottle at a later date. Does storing syrup unfiltered for a few weeks effect the taste? Does it change the grade (color)?

Will be fine. Reheating will affect the grade a little.

I have a similar question. I took my syrup off the pan just before it hits the syrup stage and plan on finishing it once my bottles arrive. Will it still be fine to store for a week or so until my bottles arrive?

It will be totally fine, but make sure to refrigerate it until you are ready to finish it.

I make my syrup this way, and I still ended up with light amber syrup. I keep my unfiltered near-syrup in the freezer in small batches. Collected batches for a month or so and then mixed them all together, finished and bottled. I don't think the color of the syrup can hardly be any lighter, so it must not have hurt it much.
