I was wondering if better draft is created from longer stack length in the steam hood? I didn't think it was necessary to consider this for steam like we do for arch exhaust. Any thoughts?

Yes, longer is better. When we first installed hood on ours, the steam would keep rolling around on top of pan. Drilled more holes in the side of cap, that helped some. Added a length of pipe & cleared it up great.

That's helpful. I thought the longer the steam pipe the more likely to be dripping back down due to cooling.

No matter what lenght it is you will get some dripping back down. Mount a large funnel under the stack to collect it and use some tubing to direct it away from your pan.
