So if you have a color of syrup which is Grade A amber rich, yet the flavor is very light, minimal maple flavoring , almost a more fancy/ delicate taste: can you grade it Delicate, or does the color determine the grade over the taste?? New hydrometer etc so syrup was pulled off at correct time etc.....thanks for thoughts?

Strictly by color. Early season tends to make some delicate flavors depending on the year.

As long as it is a good taste, strictly by color, if it has any off flavor, it is commercial regardless of the color.
