How much sap do I need to run my evaporator

How much sap do I need to run my evaporator? I have a 2x6 patriot leader evaporator with a stem hood and preheat in the hood?

~150 -200 gallons to sweeten

What is your evaporation rate? I'm sure it will take 15 gal. Or so to flood the pans. Last thing you want to do is just get it going and have to shut it back down. I have a 2.5x8 and I don't even light a fire until I have a minimum of 500 gallons.

I have the same rig and I started with 200 gallons. Worked good.
