Can someone please tell me what causes boiling syrup to foam? It seems like I use to know but if so I've quite forgotten.

Pretty sure it has to do with the viscosity of the syrup. Thicker liquid = bubbles that stay together longer.

I'm afraid I mis-spoke. What causes boiling SAP to foam while boiling?

if you are talking the white foam, i was told that was dead bacteria from the heat of the boil

if you mean the syrup itself, that would be the viscosity

Dead bacteria! That's what I remember. The reason I ask is we had some folks out last weekend and they asked me what I was skimming and tossing.
