I don't know what happened? 2 weeks ago I was producing a darker syrup but today after finishing my last batch it has really lighten up to a golden color? Did I do something wrong? Last year was my first year and all my syrup was darker. Is the lighter stuff OK to eat?13442

It's perfect. Usually syrup starts light and ends up darker toward the end of the season. Color variation can be caused by several different factors.
The length of time you boil the sap, the quality of the sap, and metabolic changes in the tree as the season progresses.

I absolutely LOVE that early season syrup, it has a vanilla flavor to it IMO. But we have been boiling everything to nearly finished, and holding it so that we can combine all of the different stages of the season, in order to get the full flavor profile of the entire season. However, we did finish off about a quart the other day to have some first of the season syrup.:D

I have been doing the same. Boiling everything down to nearly finish so I can filter and bottle everything at one time. Seems like a lot less work that way.
