Fill to 2 inches deep and start a fire. Should work just about right for you. Someone will do the math for you. Guess i am too lazy this morning. Remember you need enough sap in storage to be able to boil for a while too. Not sure what your rate of boil is? Maybe 5-10 gph???
Have fun making syrup.

If that's a 2x3 pan, I would say you want 25-30 gal of sap to start a fire. It's nice to be able to boil for a few hrs to make it worth the time to start up and shut down.

I like to have 40 gallons to start mine. The 2x3 pan 2" deep is about 7.5 gallons. My pre heater is like another 4 gallons. I stop loading wood when I am down to my last 4-5 gallons of sap. I will run my pan 3/4" to 1" deep, but I am dead level and constantly watching the boil.

If I am distracted I will run the pans a little deeper.

I also run 1" deep on my 2X3 and monitor closely....I'm always tinkering with the flow. I start with 80-90 gallons to sweeten the pan, then it's when I have the time and sap.
