Buying sap

What's the rule of thumb for purchasing sap how much should I expect to pay or to offer a solid offer to someone trying to sell sap they can't use

One year I bought it outright, the rest I have simply recorded the sugar content and the gal. Then, after I have made it into syrup, they get half, I keep half. For their half they either furnish the containers or they buy them from me at my cost, or in one case they pay by taking that much less syrup to compensate.
