How many gallons of sap to will this size pan Evaporate per hour?
Im using a 55 gallon drum and have insulated the inside with ceramic blanket(2") only the bottom and sides, and plan on using fire bricks under a fire grate to facilitate air flow under/ around fire.
Im trying to use a 20" by 4' ss pan aquired for free ontop of my barrel burner to hopefully get more efficiency out of my wood barrel burner...
Any thoughts?

The rule of thumb is 1 gallon per hr. per square ft. of pan. A blower of some type will help the most.

any type, even a small desk fan blowing into the fire box.it makes a forge effect, multiplies the heat extracted from your wood charge.

A squirrel cage blower pushing air in under the grates. For that size you want a blower between about 150-200 CFM. It will boil faster, but also burns more wood.

Adding this fan wont damage my barrel or pan.
Just asking b/c im not sure what type of equipment can handle these blowers...
Mines homemade.
55 gallon drum, ceramic 2" blanket on bottom and sides, firebricks on bottom, firebricks ontop of barrel( in-between top of barrel and ss 20" by 4' pan.
Ive not used this setup yet, been using turkey fryer while building this wood burner...
Any tips for first boil?
