Is there a correlation/relationship between weather and evaporation rates?

Yes. You'll get a better boil when the air is dry. A dry and sunny day will allow for a slightly better gallon per hour evaporation rate. I think it's more noticeable with the smaller rigs. I know when it was cold, wet and windy out when we had our pan(s) outside, a lousy day killed us.

The barometric pressure pretty much holds the maple syrup producing key!

Temperature and relative humidity could both have an effect if you're boiling outdoors. Probably much less of an effect related to weather inside a sugar shack where conditions inside the shack would have more influence. Weather can definitely affect candy making. Low humidity days produce the best candy.

That's pretty much what I'm seeing. Working hard to maintain 55gal/hr. Usually near 65. It rainy and breezy.
