I cleaned out my pan to be ready for my next boil which will be in 5 days. How long will my "sweetened" 15 gallons in food grade containers stay? I'm in southern CT and we have no snow to pack the 5 gallon containers. Temps in the 60's tomorrow with heavy rain expected. they are in my sugar shack with lids.

Bring it up to a boil and then refrigerate, should be OK till you boil again . that's what I do and just did with 7 gallons of SAP.

unfortunately I have no way to refrigerate 3 - 5 gallon containers. in normal years, I would just pack in snow. I'm hoping it is still good on Sunday since I don't want to start from scratch to sweeten the pans...

You can freeze bottles of water and then put them into the buckets with the concentrate to keep it cool...wrap buckets with blankets or some such...change out the thawed water bottles for fresh ones in the am and before bed...should work for a while, depending upon outside temps and quality of insulation. Just make sure you have tops on the frozen water bottles so they don't thin out your concentrate when they thaw... ;)

I've never done this but what if you went to a meat locker and asked them if you could put your containers in there. Tell them it's worth a nice bottle of syrup when your done.

I like your thinking OCHTO! I actually am friends with a package store owner in town. I'm sure he would let me use his beer cooler for a couple days!
