Can someone please provide the correction factors when using a hydrometer for temps over 211 degrees? What should my final brix reading be say if my syrup is 215 degrees according to a thermomter. I don't have the hydrometer in front of me but I believe the 211 final reading is 59 brix. My thermometer is not calibrated and I don't trust its reading.

I'm reading a chart out of the VT Maple Quality Control Manual, and the highest temp. on it is 209+ F which says 32 Baume and 59 Brix. Then the compensation scale goes down from there. This is for hydrometers calibrated at 60 F. I would say that it would be the same Baume/Brix from 209 to 219.

It will be such a small difference it won't matter.
