I inherited a bunch of equipment when I bought this house, and the previous owner had three pans as shown. They fit across a triple burner propane camp stove. The pans are 23"L x 12"W x 12"D.

When boiling, some of the steam rolls up the sides and curls back down and in to the center. I'm guessing that a lot of reboiling is happening.

Would it be wise to cut them down to about 6" deep?

Whats the depth of the sap your boiling? If it does end up being a problem, they would make great finishing pans, may help with keeping the bubbles from rising and spilling over.

I would leave them as they are. When you expand and upgrade to a real evaporator these would make great pans for a homemade finisher or canner. You only have to have covers made for them and thread inserts welded in to attach draw off's and thermometers.

I had a pan similar to that made for me and built burners on a frame with wheels from an old gas grill.
