Hi.. I'm not new to maple syrup making.. I"m old school.. I've just got myself a hydrometer and was looking on line as how to read it
and am just a a bit confused or reading to much into it. according to instructions bottom red is for cold reading.. and top red for hot reading.. now here's my question.. it says to take a reading at 211 F to get the right density.. I pull my syrup at 219 F on thermometer reading.. does this mean the same reading on hydrometer 211 F = 219 F for proper Brix reading of 66% or is the wrong way to read it.. can someone just tell
me in simple terms on how to use this new toy.. Thank you.. Fire Wood Chopper

To be precise it should be read at 211 F, but it's not that far off at 219 F. Finished syrup is 32 degree Baume' at 211F. The reading at 219F will be 0.25 degrees Baume' low 31.75. In other words the syrup level will be about the width of the red line above the red "hot" line at 219F. I think it will make more sense if you look at your hydrometer while you read this.

The 211* is figuring in how much temperature loss there will be from putting the hot syrup in a cool hydrometer cup and then putting in a cool hydrometer. So drawing off at 219* and then taking a reading as soon as you close the draw off will be close enough to 211* to get an accurate test. The upper red line should be at the surface of the syrup when the density is correct.
