Should have my new 2x5 Phaneuf pan in the next week or 2 hopefully. Was wondering what is the best thermometer to get for the draw off. And what do I need to install it. The pan comes with a threaded port but have no idea how to install it. Never had a professional pan before. How long of probe do I need? Are there any good digital ones out there?

I have a 2x3 Phaneuf pan and I needed a 12 inch thermometer. I purchased a 3" 0-50 12 inch one. The threaded port he put in sits a little high in the pan and is angled down so it requires a long stem to reach the boiling liquid.

i have to go to the CDL dealer to get some more tubing supplies. I would assume they would have them in stock hopefully. Are they adjustable. Say if I got a 12" one. And only had to go in 8".

Picked up a 9" 0-50 dial thermometer today at CDL. So when I calibrate this thermometer do I have to do it every boil or just once a season. It basically goes from 0-7. I'm assuming 7 means 7 degrees above boiling. I'm used to taking syrup to 104-104.5 Celsius. So usin f is new to me.

I just calibrate mine in the beginning of the season.

You CAN adjust a thermometer in your syrup. You need a fitting that has 1/4 NPT threads on the pan end and 3/16 (or whatever your theremo stem is) ferrule style fitting in the other end. Just slide the stem in or out until you are 1/4 inch off the bottom of the pan.
