hello , so I pull syrup into a 5 gallon beer keg all day throw it on propane burner and press it all to once. my question is should I balance it out using sap if its heavy? what is the best way to make sure it is right on? thanks

yes, absolutely-not that the sugar candy isn't good- if your at 70 brix with 5 gallons, add maybe 1/4 cup sap mix and re-test. or add 1/2 gal lighter syrup. don't add too much as this adjustment doesn't take much to change brix
I would just stay at the 70 honestly. The consistency is better in my opinion

You will have sugar crystals at 70, I have had them at 69. It is not that hard to adjust as you are heating up to filter or in the bottler. I draw heavy and adjust as I heat it up to bottle and recheck in bottler. I have a chart I use to let me know what the brix needs to be at whatever the temp. is. You can use a Murphy Cup also which makes it even easier.

I looked up Murphy Cup. but syrup still has to be 211 or above to check with this tool? correct?

Syrup can be at any temp to check with Murphy cup and good hydrometer.
67 brix would work for final syrup blend. You can blend it any way you want to get there.
Apples get pressed Syrup does not.:)
