If kept ice cold, can I store my sap for 3 weeks before boiling? If not, how long? Thanks.

Sap is like milk. If frozen solid it would probably be ok. If not, it probably wouldn't make it that long even ice cold. If it did, it would likely make really dark syrup.

Had a buddy that got the bug a few years back. I gave him a few spiles and away he went. About a month later he called and asked what he's supposed to do with the sap!
I sadly told him he needed to throw it away, of course he worked too hard for that sap so I let him boil it on a little pan I had...

Pretty darn good syrup!
Couldn't say that for the look of the sap.

One easy way to check it is boil a little on the stove in the house. You'll know as soon as it boils.

My best result in keeping sap is to put it in covered 5 gallon buckets and bury them in a snow pile. You'll buy yourself a couple weeks and probably get dark syrup.

All good answers so far. Two weeks, if cold and out of the sun I think you're fine. Three weeks is going to be pushing it. If it freezes, you might be able to pull it off.
